Vegetable Paella. Also good wrapped in a whole wheat tortilla. Paella has a good story about how it got its name that I will tell you.
. . .
In fifteenth-century Spain during a period of great hardship, families had very little food. So when marriages took place, everyone brought a little food to "add to the pot" for the meal provided by the bride's family. The offerings were a little rice, a few vegetables, some chicken, or whatever the family could give. The wedding guests would hand over their donation to the bride's parents by saying, "Por ella," which means " for her," meaning "This is for the bride." All the goods were combined into one large pan and everyone ate!
Veggie burgers. We topped ours with potatoes, green peppers, and mushrooms. If I can recall I added alot of salt. Thank goodness for salt. We have one week left.
